Recipe for "404 remorse" cake (generic vanilla cake)
Ingredients
1/2 cup unsalted butter, softened
1/2 cup vegetable oil
1 1/2 cups granulated sugar
4 large eggs, room temperature
2 tsp vanilla extract
1 1/4 cups buttermilk, room temperature (or 1 cup milk + 1 tbsp vinegar/lemon juice)
3 cups all-purpose flour
1 tbsp baking powder
1/4 tsp baking soda
1/4 tsp salt
4 cups vanilla buttercream frosting (optional if you hate frosting)
Equipment
Two round cake pans of preferred size
Parchment paper
Electric mixer or stand mixer
Mixing bowls and spatula
Wire rack or somewhere to let cakes cool down
Instructions
Prep the pans and oven: Preheat oven to 350°F (177°C). Grease the cake pans and line with parchment paper.
Mix dry ingredients in a bowl: whisk together flour, baking powder, baking soda, and salt.
Beat butter, oil, and sugar on high speed until light and fluffy, about 3 minutes.
Beat in eggs one at a time, then add vanilla extract. Scrape the bowl to ensure even mixing.
Combine wet and dry ingredients: On low speed, alternately add dry ingredients and buttermilk in portions, starting and ending with dry ingredients. Mix until just combined; do not overmix.
Bake the cake! Divide batter evenly between pans. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean. Cool in pans for 10–15 minutes, then transfer to a wire rack to cool completely.
Frosting: Once cooled, spread frosting between layers and over the top and sides. For a smooth finish, use a spatula or offset knife.
Storage
You can store it at room temperature in an airtight container for up to 3 days, or refrigerate it for up to 5 days.
